This recipe is for a delicious seasonal twist on the classic pineapple upside down cake. What You Will Need

• 7 tablespoons of unsalted butter, plus some extra put aside for greasing (3 tablespoons should be cut into small pieces, the other 4 should be softened)

• 1/2 cup of firmly packaged light brown sugar

• 3/4 cup of all purpose flour

• 3 Bosc pears

• 1/3 cup of toasted and chopped pecans

• 1/4 cup of cornmeal

• 1/2 teaspoon of ground cinnamon

• 3/4 teaspoon of baking powder

• 1/4 teaspoon of salt

• 1/4 teaspoon of freshly grated nutmeg

• 2 large eggs

• 2/3 cup of granulated sugar

• 2 tablespoons of whole milk

• Whipped cream

• Slow cooker

• Aluminum foil

• 1 large bowl

• A mixer

• Paper towels

• Cooling rack

• A platter

 

What to Do

• Peel, core and halve lengthwise the Bosc pears

• Allow the eggs and milk to reach room temperature

• Butter the inside of the slow cooker

• Line the slow cooker with a large sheet of foil and butter the foil well

• Turn the cooker on low

• Sprinkle the cut up butter and brown sugar on the foil in the cooker

• Add the pears, cut side down, arranged in a circle

• In the large bowl, mix the flour, cornmeal, cinnamon, pecans, baking powder, nutmeg and salt

• In the large bowl of the mixer, beat the granulated sugar and softened butter on low speed until just blended

• Increase to high speed and beat until they are light and fluffy for about five minutes, scraping the sides of the bowl as needed

• Beat in the eggs, one at a time

• Put the mixer back on low and beat in the half the dry ingredients

• Add in the half the milk

• Add in the rest of the dry ingredients

• Add in the rest of the milk and continue beating on medium speed until the batter is completely smooth

• Spread the batter over the pears in the slow cooker

• Drape paper towels over the top of the slow cooker, making sure not to touch the cake, to prevent condensation

• Cover and cook on low for three hours or until the cake sets and the sides are brown

• Turn off the cooker and let the cake rest for 20 minutes

• Lifting by the foil, move the cake to the cooling rack

•Carefully invert onto a platter and peel the foil off

• Serve with whipped cream
